The restaurant swiftly gained accolades from an international audience and put Singapore on the global gastronomic map. It also went on to nurture generations of Singaporean chefs in the art of fine French cooking, making it one of the most influential fine dining restaurant in Asia. In January 2004, Quek left Les Amis to explore the regional market. In six years, he operated as chef-owner of numerous fine-dining French establishments in Taiwan and Shanghai. In Hong Kong, Quek also served as a professional consultant to multiple restaurants. In 2010, Quek was invited by Marina Bay Sands alongside other international celebrity chefs to return to Singapore to open and helm as Principal Chef the 240-seat fine-dining restaurant Sky on 57.

A force of influence who has stayed in the forefront of the F&B industry for the past three decades, Quek continues to grow an international base of loyal followers with his distinct culinary style.
